Italian truffles, known as ‘Tartufo’ in Italy, are a species of subterranean fungi that grow beneath underground close to tree roots. They are prized around the world as a culinary delicacy – celebrated for their intense aroma and flavor that can elevate even the humblest of dishes to gastronomic heights.

Tuber melanosporum, also known as the black truffle, is a highly sought-after ingredient in fine dining. It has a dark brown to black exterior, sometimes with a subtle reddish tinge, and a dark interior marked by fine white marbling. Often rounded yet irregular in shape, each truffle carries a naturally textured, warty surface that reflects its wild underground growth. Compared to white truffles, black truffles have a milder, earthier flavour, with aromas often described as notes of chocolate, forest floor, and dried fruit.

Tuber Magnatum or white truffles are also known as Trifola d’Alba Madonna (“Truffle of the White Madonna” in Italian), the King of Truffles or White Diamonds. They grow exclusively in Italy and are the rarest and most expensive type of truffle. Treasured across the world, they have an incomparable aroma and flavor. White truffles have an irregular shape, are smooth, and range from white to ochre in color. Their aroma is earthy, and the flavor may include notes of garlic, nuts or honey.

Where & When Do They Grow?

Truffles grow best in humid, cool climates. They thrive in forests throughout Tuscany and Umbria, growing beneath the roots of various tree species – such as willow, poplar, hazelnut, and oak. Truffles are a seasonal fungus, and different varieties grow at different times of year. There are nine edible types of truffles, but the main varieties are grown in fall & winter and are named for their colour – white or black.

How Do They Get Here?

Truffle Kings has mastered the art of delivering fresh Italian truffles from the ground to your table in 48 hours. Every Monday, our truffles are found and foraged in the forests of Tuscany & Umbria by specially trained dogs who sniff them out. Our truffle hunting partners take the dog to search areas where truffles are known to grow. The dogs are let loose in these areas to track the aroma emitted by the truffle spores. Once found, the dogs react to the scent of the truffles, and start digging the ground. The truffle hunters then take over the digging, which must be done by hand so as not to damage the delicate flesh of the truffles. This is a highly skilled, laborious, and time-consuming process.

Care Instructions

How long do they last

Fresh truffles are best enjoyed as soon as possible after delivery. White truffles typically last 3–5 days, while black truffles can last around 5–7 days when stored properly in the refrigerator. For the best aroma and flavour, use them quickly.

How To Store?

For optimal freshness, individually wrap in paper towel and change paper towel every day. Alternatively, store in sealed container of dry rice – leaving you with delicious truffle-infused rice to cook with.

How To Clean?

Clean with a soft wet toothbrush, never under running water.
